How can I take a PDF attachment from an email that arrived in my MobileMe account, and just store the attachment on my MobileMe iDrive? Once stored there how can I access it from my iPhone at a later date?

You need to transfer the attachment/file from your computer to your MM iDisk storage, but I don't believe you will be able to access the file from your MM iDisk with your iPhone.
It would be easier and faster to create a server stored mailbox for your MM account, which will be available when checking your MM email account with your iPhone's mail client automatically. Use this newly created server stored mailbox to transfer an email that includes a PDF attachment for viewing on your iPhone. I email estimates via PDF files and I Bcc myself with the email. I transfer the received message with PDF attachment to a server stored mailbox that I created to store these emails with PDF files as an attachment for access on my iPhone if needed. ? A MobileMe account is an IMAP account, so you can create additional server stored mailboxes with the email client used on your computer for accessing the account, such as with Outlook or Outlook Express, or you can create additional server stored mailboxes for the account via webmail access using a browser.
A new server stored mailbox created via webmail access for the account using a browser will be available with the email client used to access the account on your computer, and with the iPhone's mail client automatically.

OK.. I got the server stored mailbox concept... Is the purpose of creating that additional client connection, to get the attachment to a computer and then to transfer it to the MM iDrive? Dell PC Windows XP Pro

The purpose for creating an additional server stored mailbox is to transfer a received message that includes a PDF as an attachment from the Inbox mailbox to that mailbox for access with your iPhone's mail client. Although you have access to the received message with the PDF attachment in your account's Inbox mailbox, doing so provides for faster access to such a received message and the attachment with your iPhone instead of having to locate the message with this attachment in your account's Inbox mailbox - especially if your receive a lot of messages that aren't deleted.
