How do you create photo albums on the iPhone? The photo app acts like it can have multiple albums to scroll through, but i dont see how to add one...

You can't add albums on the iphone. You can add them on your computer and sync to your iphone.
This question has been asked and answered on these forums many times. You can do a forum search and find more detail. powerbook g4, iMac 20 Mac OS X (10.5.1) airport express, iphone, ipod, ipod touch

If you manually create folders on your computer for storing your photos, create a parent folder that will include the folders that contain photos that you want transferred to your iPhone. Place the photos that you want transferred to your iPhone in the designated named folders, and place the folders that contain the photos in the parent folder.
Select the parent folder under the Photos tab for your iPhone sync preferences. All named folders within the parent folder than contain photos will be transferred to your iPhone. All photos transferred to your iPhone are stored in your iPhone's Photo Library. The folders or albums below include a pointer to the original photos stored in your iPhone's Photo Library - the photos in the folders or albums are not duplicated. This provides for viewing photos in a particular folder or album only be selecting the folder/album, or viewing all photos available in all folders/albums by selecting your iPhone's Photo Library. ? Hi,
The problem I find is that when you click on 'Sync Photos from:', iTunes says:
"All the existing photos in the iPhone will be replaced"... Is there any other way to do it? I don't want to lose them... iMac Mac OS X (10.5.5)

Where were the photos that are currently on your iPhone transferred from?
From another computer, or from your Mac?
If from your Mac, do you use iPhoto for your photo storage, or something else?

I found the way like you said, but it only works for the pictures that you upload... The think is, and it's very annoying, is that once you take a picture in your iPhone for a caller ID, there's no way to take it out of the camera Roll and move it to a folder with the rest of the Caller ID pictures, and then assign it to the number. So you cannot decide where to store the pictures that you take on your iPhone. And not even do it afterwards in the computer. YOu can't drag pictures from the camera roll to another folder to organize them right? iMac Mac OS X (10.5.5)

You can import photos taken with your iphone (camera roll) just like you do with any digital camera. You can then put them in any album you would like. powerbook g4, iMac 20 Mac OS X (10.5.1) airport express, iphone, ipod, ipod touch

Photos captured by your iPhone or that are available in your iPhone's Camera Roll (a photo saved from a received email or from a website is stored in your iPhone's Camera Roll), are treated as any other digital camera. These photos should be imported by your computer as with any other digital camera.
If you use iPhoto for photo storage on your Mac, you can use iPhoto for the import. I follow this by erasing the imported photos from my iPhone after the import process is complete. iPhoto includes a prompt to erase the imported photos after the import process is complete.
Transfer the imported photos to a newly created or existing iPhoto album or albums that you transfer to your iPhone via the iTunes sync process followed by a sync. The management of albums on your iPhone and which albums select photos are available in is performed on your computer - just as with your iTunes music with iTunes Playlists, etc.
You can assign a caller ID photo from a photo that was captured by your iPhone, or from a photo album transferred from your computer to your iPhone. After a caller ID photo is assigned to a contact on your iPhone, it isn't required that you keep the photo that was assigned to a contact on your iPhone. ?
